Scolarle e condirle con sale, olio, uno spicchio d'aglio e rosmarino tritato, aggiungendo anche una manciata di olive. Disporle in una teglia adatta a contenere il pesce, e posare sopra il rombo a pancia in giù. Mettere un pò di aglio e rosmarino nella pancia del pesce e passare sopra un filo d'olio. Cuocere in forno a 180° per 30 minuti circa, spruzzando con un pò di vino bianco a metà cottura.
Per porzionare il pesce è sufficiente eliminare lo strato superiore della pelle (che dopo la cottura verrà via facilmente) e prendere con una paletta i due filetti superiori, dopodicchè eliminate the large central bone and remove the threads below.
